Another Sweet Lobby

In March we wrote about a chocolate sculpture featured in a hotel lobby. This month, itís sugar art. Executive Pastry Chef Chris Hanmer of the Ritz-Carlton, Lake Las Vegas designed and created two identical displays entitled, ìAn Unexpected Oasisî that are showcased in two separate wood and glass cases located in the hotelís front lobby. Each showcases 45 orange and blue pieces created from 150 pounds of sugar. The entire project took Chef Hanmer more than 100 hours to craft by hand, using food coloring for the orange and blue hues. The sugar displays will change every season.† The next display will debut this summer. For more information about the hotel, visit
