Creamy Polenta with Onions & Herbs

Ingredients
  • 4 Tblsp olive oil
  • 2 yellow onions, thinly sliced
  • 1 Tblsp fresh thyme, stemmed
  • 1 Tblsp chopped fresh rosemary
  • 6 cups chicken broth
  • 2 tsp salt
  • few grinds of fresh black pepper
  • 1½ cups polenta (or coarse cornmeal)
  • ¼ cup heavy cream
  • 1 cup grated parmesan
Instructions
  1. In a large saute pan, heat the olive oil over medium heat. Add the onions and herbs and cook for about 7 minutes until the onions are soft and golden. Add the chicken broth, salt and pepper and bring to a boil.
  2. Slowly whisk in the polenta and bring the mixture to a boil once again. Reduce the heat to a simmer and cook, stirring constantly with a wooden spoon, until the polenta is thick and creamy, about 15 minutes.
  3. Add the cream and Parmesan and stir to combine.
