Instead of Mashed Potatoes, Try Potato and Celery Root Puree

Why settle (again) for plain mashed potatoes? Booorrriiiinnnggg. End the snooze-fest with celery root.

The addition of the root vegetable certainly wakes up this classic comfort food and lends interest! Serve it with roast chicken or game hens, seared duck, or braised beef. You will be pleasantly surprised with the unique flavor and fluffy texture.

Potato and Celery Root Puree

Ingredients
  • 6 large potatoes, peeled and diced
  • 2 lbs. celery root (celeriac), peeled and diced
  • 6 Tblsp unsalted butter
  • ½ cup heavy cream
  • salt & freshly ground black pepper
Instructions
  1. Place the potatoes in a large saucepan with enough water to cover. Bring to a boil, reduce to a simmer and cook until tender. At the same time, simmer the celery root in another saucepan until tender.
  2. Gently warm the butter and cream in a saucepan over medium heat until the butter has melted. Drain the potatoes and celery root separately. Place the potatoes in a mixer and beat while carefully adding the warm cream/butter mixture.
  3. Puree the celery root in a food processor and then beat into the potatoes. Season with salt and pepper and keep covered until service.
