Red Onion Marmalade

Red Onion Marmalade

Ingredients
  • ¼ cup olive oil
  • 1 Tblsp unsalted butter
  • 3 red onions, thinly sliced
  • ½ tsp freshly ground black pepper
  • 1 Tblsp sherry vinegar

Instructions
  1. Heat the oil and butter in a large skillet over low heat. Add the onions and pepper and cook for 30-40 minutes or until the onions are very soft and sweet.
  2. Add the vinegar, stir and cook for 15 minutes more. Cool, cover and refrigerate for up to 3 days.
