A New Favorite from France

Tomme de Savoie is a new favorite. This semi-firm, cow’s milk cheese is butter colored with small to medium holes in no special pattern. On the nose it was acrid, ripe, and musty with an ashy rind. On the palate it was nutty and mild, and toothy to the bite. It was excellent topped with pear and rosemary preserves that we had on hand.
