President Ronald Reagan's Pumpkin Pecan Pie

Serves: 1 9-inch pie
- 4 eggs, slightly beaten
- 2 cups canned or mashed cooked pumpkin
- 1 cup granulated sugar
- ½ cup dark corn syrup
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 9" pastry shell, unbaked
- 1 cup pecans, chopped
- Combine all ingredients, except pecans. Pour into pie shell. Top with pecans.
- Bake in preheated 350 degree oven for 40 minutes, or until set.
